Tater Tot Breakfast Casserole
Happy Monday! Over the weekend, we decided to make some brunch at home (it had been a while), and I had this recipe I'd been wanting to try - tater tot breakfast casserole. I mean - come on - what doesn't sound amazing about that? Tots, cheese, bacon, sausage?! Yes, please! This came out delicious and was a big hit. Do yourself a favor and make this soon - enjoy!
Ingredients:
32 oz frozen tater tots
10 oz breakfast sausage crumbles (in bulk vs. links)
1 pd bacon
12 large eggs
1/2 cup milk (I used skim)
1/2 tsp salt
1/4 tsp pepper
1 cup monterey jack cheese, freshly shredded
2 cups cheddar cheese, freshly shredded
green onions, diced, for topping
nonstick cooking spray
Directions:
When you are ready to start preparing the casserole, remove the tater tots from the freezer and set aside. Preheat the oven to 350 degrees. Cook the bacon in the oven or in a skillet and drain/pat the grease; tear or cut into smaller pieces once cooled. (Note: It's easier to fit more pieces at once by baking in the oven on a baking sheet with the wire rack at 400 degrees for about 18 minutes.) Cook the sausage in a skillet until cooked through. Pat dry. In a large bowl, whisk the eggs, milk, salt, and pepper. Stir in the bacon, sausage, 1 cup of cheddar, and 1 cup of monterey jack cheese.
Assemble the tots in a greased or sprayed 9x13 baking dish in a single layer. Pour the egg mixture over the tater tots. Top with any remaining tater tots and bake for 40-45 minutes. When done, remove and top with the remaining cheese. Bake for another 5-7 minutes. When ready, top with green onions. Enjoy!
